Make green tomato bread! Sound gross? I promises it is not. I came up with this recipe a few years ago when I was overrun with green tomatoes.
Green Tomato Bread (*also good as zucchini bread recipe)
WET INGREDIENTS
6 tbsp flax mixed with 1/2 c. warm water
1 1/2 c. maple syrup
1/2 c. applesauce
1/2 c. oil
1 tsp. vanilla
2 + c. finely diced green tomatoes (about 4 med sized)
DRY INGREDIENTS
3 c. flour
1 tsp salt
1 tbsp b. soda
1 tsp b. powder
1 tbsp cinnamon
2 tsp nutmeg
chopped walnuts (optional)
Preheat oven to 350. mix flax and water and let sit. mix remaining wet
ingredients. mix dry ingredients. mix wet into dry. pour into
casserole or baking pans. bake for 45-60 min until knife comes out
dry. (cook time depends on what type of flour you use. i like it with a
mix of coconut flour and rye flour. I think it would be good with any
kind. Gluten free flours take longer to cook than regular so start
checking after 45 min to see if it is done)
